Dark Chocolate Mocha Avocado Mousse

Who doesn't like avocados? So rich and velvety, with tons of macronutrients and antioxidants. Imagine a satiny dessert, full of chocolate flavor, combined with a hint of espresso, and with avocado as the star of the show. Decadent and indulgent, yet still healthy and fresh. More than worth trying! And no guilt needed.

INGREDIENTS:
  • 1/2 cup (about 2 ounces) dark chocolate 70% or higher
  • 4 ripe avocados
  • 1/4 cup coconut milk
  • 1/4 cup unsweetened dark cocoa powder
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3 teaspoons espresso
METHOD:

First brew some strong, black coffee. Leave to chill, and strain any sediment.

Preheat your oven to 400° F.

In a large bowl sift together the flour, sugar, baking powder, cinnamon, and salt; set aside.

In a medium bowl combine milk and espresso coffee.

Mix in the eggs, melted butter, and vanilla.

Add the liquid ingredients to the large bowl of dry ingredients. Mix until all the flour is moistened. You don’t want to over mix. Some lumps are okay.

Fill greased or lined muffin cups 2/3 of the way full.

Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
